The sheep's milk used for production comes exclusively from Pienza and the neighbouring municipalities of the Val d'Orcia.

Pecorino with a smooth and firm rind, almost without holes. Balanced and pleasant in the mouth, it matures moderately to long, with an optimal aging period of 90 to 180 days. Its surface is treated with olive oil lees, which gives it its characteristic brown colour.

Ingredients: Pasteurised sheep's milk, Volterra salt, rennet and lactic ferments. Surface treatment with tomato paste and preservatives E235, E202.
