Linguine Tirrena Frescobaldi

The Tirrena Frescobaldi pasta is semi-wholemeal pasta made from durum wheat semolina, lightly refined, obtained from ancient grains, rich in fibre, polyphenols and vitamins, and very digestible. The varieties of wheat used are Senatore Cappelli, Khorasan, and Evoldur. These are grown in the Frescobaldi estates, transported to the Molino Borgioli in Calenzano, and then processed in the artisanal pasta factory Fabbri in Strada in Chianti using a traditional method passed down from generation to generation. 

The pasta is bronze-drawn and then slowly dried for at least 3 days up to 6 days at temperatures below 38°C. This gives it, in addition to the characteristic hazelnut colour and wheat aroma, great digestibility and an extraordinary ability to absorb sauces.
