A rare treasure of Italian gastronomy, UMAMI black lemon is made from whole Italian lemons with edible peel, slowly ripened for a month at controlled temperature and humidity. This natural process — similar to that used for black garlic — transforms the lemon: its colour turns black, its texture becomes melt-in-the-mouth, and its flavour deep and complex.
