Raw milk Pecorino Roncione
The Pecorino Roncione is one of the most unique and emblematic cheeses from the Busti family production. Made from our best fresh milk, processed raw to fully preserve its natural microbial flora, it is aged for at least 60 days in a cold room before being transferred to the 18th-century cellar of Roncione, a hilltop village from which it takes its name. The cheese remains there for at least 90 days, at variable temperatures and humidity levels, resting on wooden boards and straw to allow its base to breathe and protect it from excessive moisture. This process gives the Pecorino an intense and unique aroma and flavour.
Ingredients: Raw sheep's milk, Volterra salt, rennet and lactic ferments. Surface treatment with preservatives E235, E202 and straw. Lactose-free (< 0.01 %), thanks to the natural manufacturing process. Contains galactose.
