Mild and semi-refined Pecorino DOP is produced with milk selected from farmers recognised by the Consortium for the Protection of Pecorino Toscano DOP and certified by a MiPAAF-approved inspection body. The opaque white paste is compact and slightly chalky, with an inviting flavour. During the maturing period, the cheese undergoes a series of olive oil treatments that give the rind its characteristic brown colour.
Pasteurised sheep's milk, Volterra salt, rennet and indigenous ferments. Surface treated with olive oil bases and E202 preservatives.
