Baci Zabaione" are delicious Italian biscuits that combine the sweetness of Baci di Dama, also known as "lady's kisses", with the rich, creamy flavour of zabaione, a cream made from egg yolks, sugar and Marsala wine.

To prepare these delights, start by making Baci di Dama biscuits, which are traditionally made with flour, butter, sugar and ground almonds. These biscuits are shaped into small balls and then baked until golden and crisp.

Next, zabaione is prepared by whisking the egg yolks with sugar and Marsala wine over a bain-marie until they become thick and frothy. Once cooled, the zabaione is delicately spread over half the Baci di Dama biscuits, then another biscuit is placed on top to form a "kiss".

Lhe end result is a divine combination of crunchy and creamy, with rich flavours of hazelnut, Marsala wine and vanilla. Baci Zabaione are perfect with coffee or afternoon tea, or as an elegant dessert at the end of a fine Italian meal.
