Culatta Emilia - Cœur de jambon de Parme
Soft and tender as tradition dictates, Culatta Emilia, the pride of Devodier's production, is produced as in the past to respect its authentic flavours. Obtained from the same cut of meat as the prestigious Culatello, Culatta Emilia is left partially covered with rind, as tradition dictates, to allow it to adapt to the stronger ventilation in the Apennine hills.
Culatta Emilia is produced in the provinces of Parma, Piacenza and Reggio Emilia. It is this land that gives the meat its unique, mild flavour.
