Tirrena Frescobaldi pasta is a semi-complete pasta made from durum wheat semolina. It is unrefined, obtained from ancient grains, rich in fibre, polyphenols and vitamins, and very easy to digest. The wheat varieties used are Senatore Cappelli, Khorasan and Evoldur. These are grown on the Frescobaldi estates, transported to the Molino Borgioli in Calenzano and then processed in the Fabbri artisan pasta factory in Strada in Chianti using a traditional method handed down from generation to generation.  

The pasta is drawn in bronze and then dried slowly for at least 3 days and up to 6 days at temperatures below 38°C. As well as its characteristic hazelnut colour and wheat flavour, this gives it great digestibility and an extraordinary ability to absorb sauces.
