Lardo di Colonnata is a renowned product, made from the fatty layer of the pig's back. This delicacy is prepared according to time-honoured traditions, using only fresh natural flavourings and no added preservatives, with the exception of sea salt.
The maturing process is crucial and takes place in white marble conches, known as "canaloni", for over 6 months.
After a preliminary treatment of the conches, a brine is formed by osmosis, favouring the development of the sweet, fragrant flavours that characterise Lardo di Colonnata, a world-famous delicacy.
